Bean and artichoke salad
An extremely fast but delicious salad recipe suitable for lunches and dinners.
It will only take you a few minutes to put the salad together and serve.
What you will need:
400 grams mixed beans, drained
5 artichoke hearts
1 large tomato, diced
1 tablespoon toasted pine nuts
40 grams low-fat cheese, cut into small cubes
1 tablespoon of fresh parsley, chopped
1 tablespoon lemon juice
1 tablespoon soy sauce
All you need to do is toss the ingredients together in a salad bowl, leaving the lemon juice, soy sauce and pepper to taste at the end.
