For a quick and easy meal that can be cooked at any time of year, you can’t look past chicken with roast tomatoes.
The recipe is simple to follow and only a handful easy to get ingredients is needed.
You will need:
– olive oil
– 4 chicken tenderloins
– 1 punnet of yellow teardrop tomatoes
– 1 punnet of cherry tomatoes
– 1 cup of basil leaves
– 1 thinly sliced red onion
– 1 tablespoon of red wine vinegar
First of all, you need to roast the tomatoes. Preheat your oven to 220 degrees Celsius, put all the tomatoes in a baking tray and then do a short drizzle of olive oil on top. A tablespoon should do. Put the tray in the oven and roast for five minutes.
Now you must cook the chicken. Warm a frying pan on medium-high. Add a touch of olive oil and then add the chicken pieces. Cook for about 4 minutes on each side, or until cooked through.
Finally, put the basil leaves and red onion into a large salad bowl. On top of this place the roasted tomatoes, making sure you include the juices. Mix in your red wine vinegar and add seasoning if you wish. Serve alongside the chicken or on top of it, as you please.
