Classic open souvlaki

If you are in the mood for a Mediterranean delight, treat yourself to a tasty open souvlaki. Not only is this meal full of fibre and iron, it has plenty of healthy leafy green bits to get your digestive system going.

What you will need:

400 grams trim lamb, diced
2 cloves of garlic, sliced
4 tablespoons tzatziki dip
4 slices wholemeal pita bread
2 cups baby spinach
1 cup cucumber, diced
1 cup tomato, diced
1 red onion, finely sliced
40 grams low-fat feta cheese

Cook the lamb and the garlic in a fry pan, ensuring the lamb remains tender.

Spread the dip on the pita bread and cover with spinach, cucumber, tomato and onion.

Put the cooked lamb on top, and break the feta over the top.
