Fish cakes

The secret about the health benefits of fish is well and truly out. Get your daily dose with this simple fish cakes recipe.

What you need:

300 grams boneless white fish fillets (bream and rockling are good options)
1 tablespoon olive oil
1 egg, beaten
½ cup self-raising flour
1 small cucumber, finely chopped
½ red capsicum, finely chopped
3 spring onions, finely chopped

You can either mash the fish in a food processor or chop it finely.

Once you have dealt with the fish, combine it with the other ingredients in a bowl.

Heat the oil in a nonstick fry pan and cook the mixture in small patties until golden brown on both sides.

The recipe should make about 12 patties.
