Get that warm fuzzy feeling with a scrumptious soup recipe filled with great nutrients.
It will take you less than 30 minutes to cook and what you don’t eat right away can simply be refrigerated.
What you will need:
1 leek (white part only), washed and sliced
1 brown onion, chopped finely
2 cups made stock powder, your choice of flavour
800 grams tinned tomatoes, chopped
1 carrot, peeled and cubed
500 grams pumpkin, cubed
3 celery stalks, chopped
1 broccoli head, steamed
2 tablespoons olive oil
Warm the olive oil in a saucepan, and then add the onion and leek, cooking over a low heat until soft.
Add the tomatoes, stock, carrot and pumpkin.
Bring the mixture to the boil, then lower the heat and allow to simmer for 10 minutes.
Finish with steamed broccoli and simmer for another 10 minutes.
