Olives

Olives are one of the oldest foods in history, and they date back more than 8,000 years in the Mediterranean region.

The food itself comes from an olive tree, which was valued as a symbol of peace and happiness back in the day and olives were used as food and a source of oil.

As well as being a great source of nutrition for humans, they are also a great tasting food, and one which can be slightly addictive at times.

Olives come in many different colors and shades, ranging from green, to black, and even to a brown purple colour.

But the truth is, all olives actually start out the same colour – green. Unripe olives are incredibly bitter and not edible, but as time does its thing, they begin to become more edible and taste less intense.

The actual bitterness you taste when you eat them is caused by a substance called oleuropin, and it means that the bitterness is very hard to get rid of.

There are many different types of olives, ranging from Beldi, Haldidiki, Gaeta, Cerignola and Bitetto.

Health-wise there are many benefits that come with eating olives. There are rich in iron, vitamin E and copper, and are an excellent source of fiber.

Despite the fact that olives are high in fat, they are incredibly high in monounsaturated fats and as a result can be an essential part of some diets.

Monounsaturated fats have been found to reduce the risk of atherosclerosis and increase good cholesterol, while reducing the bad form.

Olives are also rich in vitamin E, a fat-soluble antioxidant that neutralizes damaging free radicals, along with polyphenols and flavonoids, which have anti-inflammatory properties.

They can also help prevent cancer, reduce symptoms of asthma, help prevent heart disease, and reduce feverish symptoms.
