Seared Tuna Salad
An easy-to-make summer treat that fits in with your workout routine and will impress any lunchtime guests.
What you will need:
2 tuna fillets – the fresher the better
Salt and pepper to taste
5 cups of chopped cos lettuce
2 cups of cherry tomatoes, halved
¼ cup of diced red capsicum
½ cup of pitted olives
…and for the salad dressing:
2 tablespoons of olive oil
2 tablespoons of lemon juice
1 tablespoon of Dijon mustard
1 clove of crushed garlic
¼ tablespoon of dried thyme
How to make it:
Heat a non-stick fry pan on medium-high.
Put a touch of salt on pepper on either side of the tuna fillets. Sear the fillets for just less than one minute on either side.
Set aside the tuna fillets.
Take a large salad bowl and toss together the tomatoes, lettuce, capsicum and olives.
Take a smaller bowl and whisk together the dressing ingredients.
Using a sharp knife, slice the tuna fillet into two-centimetre slices.
Divide the salad between two plates, top with tuna and finish with dressing.
